Restaurant style Vegetable Fried Rice

Ingredients

Basmati rice-1 cup (250 ml cup)

Lemon juice – 1 tsp (½ lemon)

Garlic – 2tsp (3 cloves)

Spring onion white – 2 tbsp

Spring onion green -1 tbsp

Capsicum – 2tbsp (1 small)

Carrot- 2tbsp (1 medium)

Cabbage-2 tbsp

Beans – 2 tbsp (7-8)

Pepper powder – 1/2tsp

Soya sauce-1tbsp

Salt-to taste

Vinegar – 1/2 tsp

Sugar – 1/4 tsp (1 pinch)

Oil – 1 tbsp

Ghee – ½ tbsp

Water – 2 cups (500 ml)

Method

Wash the rice, soak for 15 minutes and drain it.

Add 2 cups of water, 1 teaspoon salt and lemon juice to rice and boil it. Lower the flame once the water is boiled and cook until done (around 15 minutes).

Drain, allow to cool and keep it in the refrigerator for at least 2 hours, it will be better if kept overnight.

Finely chop all the vegetables.

Heat oil in a heavy bottom kadai, add garlic saute for few seconds, add spring onion white, capsicum, after few seconds add carrot, beans and cabbage.

Saute well and add salt, sugar, pepper powder, soya sauce and vinegar.

Finally add the cooked rice and mix well. Cook for 3-4 minutes in high flame.

Add salt and soya sauce if needed. Finally add ghee and mix well. Garnish with spring onion green.

Easy restaurant style fried rice is ready.

Vinegar Sauce

Vinegar – 1 tbsp

Water – 5 tbsp

Chilly – 1 tbsp (3-4 medium)

Sugar – 1tsp

Salt – ¼ tsp

Method: Mix all the above
